Oolong tea – used in Tea Plays' 'Brainstorming' Bonbon – is semi-fermented black tea. Oolong is known in China for its special aroma and is made only with particular varieties of tea plant and only in certain regions of the country. Oolong tea is also known for the time-consuming process needed to make it.
Rotating: A special operation unique to the processing of Oolong tea
Friction between people is stressful – friction between tea leaves helps to make Oolong! Rotating is only used in Oolong tea processing. It causes friction between the leaves and changes the cellular organization at the edge of the leaves. It allows a limited amount of fermentation to happen. This period is the most important step in forming the Oolong fragrance – it is also when the special color appears, with the green leaves beginning to take on red hue.

Among Oolong teas groups, Minnan, Minbei, Fenghuang-Dancong and Taiwan Oolong tea are most favored by Chinese consumers.
